To make and assemble the cupcakes, simply make your favorite cupcake recipe. I chose "Perfectly Chocolate Cupcakes" from Glorious Treats. This recipe makes a moist chocolaty cupcake, and is now my go to chocolate cupcake, cake pop and cake recipe. For the icing, I chose a cream cheese frosting tinted pink. If you don't have a great recipe, I highly recommend this one from Glorious Treats too (If you haven't checked out her blog, you definitely need too! She has great recipes and adorable decorated cookies). For the Minnie Mouse portion of the cupcake I used one regular sized Oreo and one mini sized Oreo for each cupcake. Place the regular sized Oreo on the cupcake, then separate the mini sized Oreo and use each piece for the ears. I applied a small amount of frosting to each side of the mini Oreos to "glue" them to the regular sized Oreo. Next I used the frosting to pipe a bow between the ears and that was it! I had originally wanted to make a fondant bow, but I ran out of time. If you have the time to make the fondant bow, check out Byrdie Girl Custom Cakes (my inspiration for the Minnie Mouse cupcakes). She provides a great tutorial on how to make a bow out of fondant that is really easy!
